Do you have any healthy recipes you’re willing to share for sauces? I tend to add very little to my fish or chicken so if you have any suggestions to add a little variety to the palette, that’d be great!
My go to is olive oil & salt and pepper or Cajun seasoning or lemon and herbs Or ginger and soy.

I'l have to do some research. I don't really sauce chicken or fish, I really rely on the herbs that I cook them with. My favorite is grilled lemon chicken breast. All I do is coat the skinless breast lightly with olive oil, then I salt and pepper it to taste. I put it on the grill as hot as I can get it (500+) and in the last couple minutes squeeze lemon juice over it. It really infuses it with flavor.
I prefer salmon for fish but if you are doing it sandwich style there are sauce alternatives that are nice. They come from a book called "Vegan Burritos and Burgers". I haven't tried any of them on fish yet but they do have some fish burrito alternatives that they put the sauces on so it could be worth a try.
